Honestly, just test it yourself. Eat only raw fruit for however long, see if you get fat. You won’t.

I’m not sure if you realize just how much added complexity that is, and how much extra funding would be required. Go ahead and write your grant proposal and see what happens though.

You can make it, and it isn’t bad, but the tannins aren’t particularly pleasant. I love tannins in tea and wine, but not so much in a milky form. You can leech some of the tannins out soaking in water, just depends on how much work you want to make it.
