The lowest COP you will get out of Mitsubishi hyper heat unit is still 1.8x better than resistant...

Ops system is good down to -22f, will lose BTU's but will still put out heat, the standard MR. Cool wall mount units with the "quick" connect lines are not low ambient units and are only good to about -5F and lose almost 50% of their BTU output at that temp, so size your system accordingly..

Get more quotes...for something that expensive it really does pay to do the footwork and get a reasonable quote...
The air handlers are really the cheapest part of the system and rather easy to swap out, might be worth it to replace them as well. You do have to pair the outdoor units with the indoor.. some are compatible but most are a matched set...designed and engineered to work together...

That is just flat out false. Norway, Sweden and Finland have been using them for over 20 years... The newer units function just fine down to -22F....
Totally off grid will be ridiculously expensive... better solution would be go all electric mini splits + heat pump water heater... then add grid tie solar to get net negative on annual consumption. You will end up with a minimal connection fee.. not sure in MA but in WA it's about $7 a month...
