I suggest looking at anything in Ocean Township, Eatontown, or Tinton Falls. They should have a nice selection of apartment complexes that could fit your requirements.
Fair warning- both Monmouth and Ocean counties have areas that are damn near impossible in the summer time. Monmouth generally is easier because there’s no barrier island traffic that makes the main roads bottleneck. Monmouth, in my opinion, has an immaculate selection of parks and trails.
Year-round, Ocean county is a less friendly place in general.

D&R State Park/Canal Path for a nice stroll
Baldpate Mountain or Sourland Preserve for some action
Edit: Princeton also has a bikeshare/rental service (that’s about the limit of my knowledge about it) but you can ride these bikes on the canal path too

Seconded. Had LA fitness and it was totally worth paying a higher membership fee. Higher quality machines, a pool, and access to PT services at every location. Sadly due to COVID and a permanent change to my routine it made no sense to keep the membership.
