He's been in multiple successful heavy bands, done tons of side projects, solo work, remixes, and one-time improvisational performances that have been released. I've always at least liked everything I've ever heard, and I love most of it.

Stevie Ray Vaughn's cover of Jimi Hendrix - "Little Wing" is up there for me. Smooth, takes a theme and just keeps lifting it up to new levels as the song goes. Very pretty.

Two members of Red Hot Chili Peppers (Navarro, Flea) played instruments on Alanis Morissette's You Oughtta Know. They were playing the instruments they were known for, however.
Flea also appeared on The Mars Volta song The Widow, this time playing the trumpet. That one definitely fits your post.

I like all the Rubin-produced Cash records, even the ones where John sounds old and haggard as hell, because it's all captured so well and it fits.

Less heavy, but Johnny's cover of Soundgarden's essential track Rusty Cage is such a cool reimagining. It's overshadowed by Hurt, and deservedly so, but I'll always petition for people to check it out when I'm replying in threads about covers.
