Actually, from talking with apple support, you can extend the fixed AppleCare beyond, you just have to call in the last month and they’ll switch it over to the monthly subscription model for you. Works on the big devices (Mac, iPad, iPhone. Not sure about audio though).
You should be able to use any Bluetooth headphones with iPhone. I have (used the 2nd gen SE and now have the 13 pro)
