For fusion there is a great spot on Carlisle Pike called BonBon Cafe!

Cool story, bro. Yak & Yeti is great, though not for ramen. Issei is also "Seat youself" as well as a "Pay at the Counter" restaurant. They also have stopped allowing certain changes to their menu in an effort to be consistently authentic.
