I'm not sure if you want to replumb your house, but old brass fittings had lead in them. Newer lead free ones have markings to identify them. Learn more about that here

You can put another brass tee on top of the other one

You'd snip the white 1/4" line a couple inches in from the other tee and install the 1/4" tee there.
Edit: or a couple feet in. It really doesn't matter where you tee

People do that with dishwashers all the time, yeah.
Clothes washer, idk. They have a pretty high discharge rate. I've never seen it under a sink like your dishwasher is.
