1/2 c warm water
3/4 c warm milk
2 tsp dry active yeast
1/2 c + 1 tbsp granulated sugar
1/2 tsp salt
5 large eggs
1/2 c unsalted butter
5 1/2 c all purpose flour
For the maple glaze
1/4 c unsalted butter
1/2 c brown sugar
3 tbsp milk
1 tbsp corn syrup
2 tsp maple extract
2 c powdered sugar
Combine water, milk (110°F), 1 tbsp sugar, and yeast. Whisk and wait until foamy (≈10 mins).
In a stand mixer, add flour, salt, granulated sugar, yeast mixture, and eggs. Mix together with dough hook on med-high speed.
When dough comes together, add softened butter and continue mixing for about 8 minutes or until dough is smooth and does not stick to sides.
Place dough ball in greased bowl and cover with a towel. Let it rise in a warm place for an hour.
After rising, punch dough down, reshape, and let it rise until it doubles in size.
Place dough on a floured surface, roll to about 15x17 rectangle and 3/4 inch thickness. Cut out maple bars and place on a floured baking sheet. Let them rise for about 30 more minutes.
Fry each side until golden brown in 360-375° vegetable oil. Transfer to baking sheet and let cool completely.
Melt butter, brown sugar, milk, and corn syrup in a sauce pan. Turn heat to medium and let it come to a simmer.
Turn heat off and add maple extract and powdered sugar. Stir until smooth.
Dip cooled donuts into glaze and set on a cooling rack.
