Heat liquid to a simmer. Whip egg yolks alone or with sugar if using cream&sugar until frothy and increased in size. Temper egg yolks w/ spoonfuls of hot liquid, then pour into vessel and heat gently until slightly thickened. Whisk constantly and add nutmeg.

Then just coat some (ideally somewhat stale) bread in the eggnog, and cook in a pan with plenty of butter. Boom! Eggnog french toast!
