There are a bunch of restaurants in Stowe, Matterhorn is pretty decent, so is Piecasso. If you're looking for low maintenance activities, they are pretty sparse, but you could do a microbrewery trip. Stowe Cider, Ten Bends and a few others in the area. Von Trapp has a nice brewery tour and beer hall. There are also many nice parks to sit at and have a picnic lunch. Plus the Ben and Jerry's factory is about 20 minutes away in Waterbury (next town over), I always recommend that one.

Matterhorn is an après ski place, it's not a date place.
Trapps is more of a date place. Again April is not a great time. If you came after the mud had dried up and frost is over, Trapps has really nice gardens to explore.

Piecasso was great. My wife and I liked Idletyme- they’re apparently closed for a bit due to a burst pipe but we had a nice time there. There’s a little bit of a main drag that’s nice to shop around at. The Skinny Pancake has really great stuff (took me forever to figure out they don’t actually have pancakes and they sell crepes). Stowe has lots to offer. April could still be pretty cold.
