For years and years we've been helping Google read books by reading scanned words. Now we're helping them read traffic situations.
That leaves me to wonder: what's next? What large machine learning projects needs tons of tagged data that can be delegated to untrained people?

How? Google needs speech where it knows what is said to train the software. That's most easily done with audiobooks or transcripts conversations, not random people speaking without it written down somewhere.

Before picking traffic lights it was writing numbers and words. They came from street view and googles project to scan books. You can now enjoy the fruits of that in google lens for example.
That game that played like Pokémon go before it was used to have people walking into alleyways and such for google maps.
Captchas are needed because people are bastards. You can't even start to imagine the insane amount of time and resources dedicated to fighting bastards.

There will be a time where captchas will be unsolvable for mankind but the machines will excel at this task. When this time will come you will be recognized as a human if you fail on a captcha.
In other words, access will be denied if you are actually able to solve them.
