I’ve never heard of that but it seems to be popular!! I’ll have to try it sometime.
I love their Guisado de Barbacoa.
Perches is more true to what people in Mexico eat, not the texmex of most “Mexican” restaurants. Just know that they have some common ingredients but are not really the same thing.
Cesar’s old Mexico
Love Cesar's. I would recommend going either early or late as it gets very very crowded. There is usually a wait on weekends. Plus it's a pretty small space and is really loud when busy.

Oh man, Caesar’s is my fav restaurant in town and I’ve had almost all of their menu items lol.
My personal fav is the Chipotle Shrimp. They give you flour tortillas with it so you can make lil tacos, but fuck that I just mix that shit all up, add a lil cholula and down the hatch.
Close second is Tilapia Ranchera, same story, just mix it and go ham.
If you want something super basic, try the Pollo con Queso. It’s just Mexican rice and their amazing cheese dip all mixed up with seasoned grilled chicken.
Then there’s the granddaddy of them all… The Big Tijuana. All the meats. All the sides. I think it’s like 35 bucks but it’s a great one to share.
The popusas and quesadillas and tacos are all great too. Last thing… careful for the margs, those fuckers are STRONG.
Ok so with the Chipotle Shrimp, you mix it all up and eat it, but what do you end up doing with the tortillas? Do you eat them too? Separately from the fillings or between bites of fillings? Give them to your friend? WHAT HAPPENS TO THE TORTILLAS

If you want to try it but it's too busy, order food to go. The pupusas are excellent

Been going to amigos for almost 20 years now. My kids love Martin.
I’ve never directly asked, but they have to make their salsa fresh daily instead of batching, breezing, and thawing…it’s very fresh tasting. As far as texmex goes, it’s good…and the folks who run it are good folks. I shifted what I was eating so I haven’t been there for awhile, but I also recommend them.

From what I hear in the back of Leslie’s Mexican market in the old dollar general there is a very authentic Mexican restaurant.
Is that where that went!? I ate there once years ago and the next time I was back it was gone, I'm glad to hear they're still around. I'll have to stop in next time.
Can confirm, this place is as close to "authentic" as you're going to get. Everywhere else you're getting the same salty chicken, cheese, and rice with watery salsa as every other Mexican restaurant. Leslie's though is legit. It's on par with enjoying family dinners with Mexican friends and everyone there was very welcoming and pleasant.

Taqueria Cachanilla is my current favorite
Good food, but twice they gave me unauthorized substitutions on my to-go orders.
They also charge you to use your debit or credit card. It's only a couple bucks, but I'd rather pay more for the item than an extra fee.
Los Mochuacanos Garcías are very authentic but they do have Tex Mex stuff if you prefer that. Start with the queso and a jumbo marg.
And a torta as big as the plate it's served on!
Took me a literal decade to find this place. The only authentic Mexican in Springfield, in my opinion. Cannot upvote enough!

Cesar's Old Mexico on Sunshine and Oak Grove, or El Pablano off Kansas Expressway and Norton, roughly. Cesar's has GREAT Chile Verde, and El pablano has some of the best tortilla soup I've had in a long time.
Tacos El Gordo, hands down.

Not Mexican but don’t sleep on the food truck park’s La Chiva Colombiana. I have Colombian friends that say it’s as good as anything back home.

There's a good food truck on Glenstone/Bennet, i think it's called El Ranchito Mío or something like that? Maybe just El Ranchito. I have gotten tacos de carnitas and tacos al pastor. A lot of the time i order just three tacos and they give me four. They have other stuff besides tacos too. I would say the place is definitely authentic, i sent pics to my Mexican Spanish tutor and she agreed que sí es auténtico.

La Hacienda and Perches do Jalisco/west coast Mexican very well.

Did not see Casa Bella in this thread, wouldn't say its the most authentic, but it is delicious.
Believe it or not- I went to Taco Habitat and it was really really good!! It left me wanting more!!🙌🙌

I gotta say, i don't consider it Mexican food but i do enjoy a good half burrito enchilada style like, once or twice a year tops lol. It's not Mexican food though, it's a Springfield local concoction that happens to involve tortillas.
