I feel like I remember it the guys wife wears a ribbon and she never takes it off and one day he removes it and her head falls off or something

Sounds about right, I was always scared of the thing in the cornfield story. That picture in the book was a bit much for a little kid

I don't remember it being in those books. The book I remember it from was in color. Scary stories illustrations were black and white. At least that's what I remember
