I'm thinking of booking a hostel instead. It's much cheaper though I'd still need to ride the subway

This is the move. Yes, you can get to jersey on public transportation - perfectly safe - late at night, but it's a hassle. You'll enjoy life a lot more if you just try in the morning.

Find a hostel in a fun area and go out late at night. It's New York City. There will be something to do.
