The Monmouth County Park system offers a lot adult programs. Ocean might do the same. You can check this pdf or just Google Monmouth county parks pottery class.

There might be something at Rutgers in New Brunswick.

The Montclair Art Museum has adult classes, but it's a heck of a drive.

I don't know how far you are from Middlesex County, but The Clay Pot in Spotswood offers classes and such.
