There's so many to choose from, but I have three in particular:
The Duke Brothers in "Trading Places." This especially feels like kissing cousins to "Glass Onion". It's always satisfying to see rich jerks get brought low, but seeing the Dukes brought down by their own scheming and by their own victims is sheer perfection. When Dom Ameche impotently screams "TURN THOSE MACHINES BACK ON!!!", you probably have the same expression as the smirking Wall Street official reveling in their downfall. (Somewhat tempered by their appearance in "Coming to America.")
Warden Norton in "Shawshank Redemption". Seeing his meltdown upon Andy escaping would be enough, but then Andy blowing the lid on his crimes and leaving behind proof of how completely he played him over the years is just perfection. ("Dear Warden. You were right. Salvation lay within.") He not only is ruined and commits suicide, he goes to his grave realizing he was a complete fool.
Captain Vidal in "Pan's Labyrinth." It says a lot when a movie has a nightmare like the Pale Man and this vile fascist is the most frightening and horrific character in it. And he gets destroyed by one simple line right before he's put down: "No. He won't even know your name." Perfection.
