If the slow pacing of 2001 didn't bother you, I loved "Barry Lyndon", a slow, almost dreamily-paced period drama about an ambitious, self-absorbed young lad and his adventures across Europe. The art direction and photography on this movie is simply astounding, every scene resembling a literal portrait from that period. An absolute feast for the eyes.
Also The Shining (one of the most analyzed movies ever), Full Metal Jacket, Dr Strangelove, the guy could do anything.

I like it, I don't love - in fact, although this was my favorite Kubrick movie at one time, it's the one film of his I think aged most poorly.
Additionally there's the fact that the movie ends after the book's Chapter 20, and having read the book, Chapter 21 really changes the whole ending :)
