That is the sear, not the uncooked meat. The lighting makes it difficult to see but I cook a lot of meat I can see it's not the uncooked meat, look at the char spots.

I will say it couldve been done hotter and faster but it doesn't look terrible, definitely wouldn't be disappointed being served this by a friend in their home.

Your pan needs to be hotter when you sear.
