Red cabbage is one of the only foods that are naturally blue. People are selectively breeding it to produce a super strong blue for natural food dyes. Theres a lot of money in it

A basic solution will turn it green, and then yellow, depending on ph. And an acidic solution will turn it purple then red, depending on ph.
