Same here in England, except we do English, Science (Combined or Triple, your choice) and Maths, then 4 other subjects of choice (3 subjects of choice if you do Triple Science). The physical part of P.E. is still mandatory for everyone though, so the P.E. option is actually a BTEC

A thing my school does is make subject lines depending on their popularity.
EG, if Music and Ag-Science weren’t popular, they’d only be used on one line. But if French and Physics were very popular, they’d be on multiple lines.

You need to know a bit about all of them to have a well-rounded education, and you can’t find out which subjects you enjoy/excel in without actually trying them. It’s good to have at least a few years in each subject because sometimes success or interest depends on the teacher or specific topic. For example, I always hated math, but I did well with trigonometry, or with good teachers.

Teachers are qualified to teach subjects at a variety of levels. The average pupil does not require the level of expertise a teacher has. It's only really at the highest level that actual degree level expertise is required. The rest is simplification and communication.
Most teachers could teach every subject to some degree, and do when covering, etc.

School today is just for bragging rights and "better salaries". The learning part can be done way quicker on your own if you have any sense of discipline and know you interests.

It’s good to know a bit in a good few subjects, but for Senior years in schools, they should pick what subjects they want.
In Ireland, after you do the Junior Certificate Exam, you do English, Irish, Maths and 4 other subjects of your choice, which I think is good.
