Technically I don't think they have to pay out sick time if it's not in your agreement.

But I will say you can probably find a lawyer to take this retaliation case and they'll charge a percentage of the winnings. I feel like it should be an easy win if you have anything in writing.

No, she was smart enough to not put anything in writing. It was always over the phone or in person.
