I'm going to assume you didn't just crawl out from under a rock and know the things that can be done in any city, like drinking, adult ed classes, listening to or making music, and team sports. So I'll mention one fairly unique to JC/Hudson county that doesn't occur to many: boating. We live on a peninsula and have some opportunities to get out there when the weather is nicer than it is now. There's kayak boathouses in Hoboken and Laurel Hill Park, and there's marinas where racing sailors are always looking for a strong hand to help crew, and there's some sailing ed programs.

Another thing is religious oriented young people's groups. When we moved here the "Young Leadership" group at the Hoboken Synagogue was very active, going out after services on Fridays and having events. Many marriages were made there. No doubt other denominations have their own equivalent.

I was only including community oriented activities, not businesses like the kayak school or jetski rental there. But that raises an interesting question, is there a master list anywhere of nonprofit clubs and volunteer organizations in the area? That would be a handy thing to add to our FAQ.
