It depends on your charging style. For example, I charge overnight, so I have an Apple 5w charger from my old iPhone and it slowly charges overnight and stays cool throughout; but I also have an Anker fast charger for if I forgot/it’s a weekend and I need to quickly charge it before going out.
So it depends on your use case really. If you’re an overnight person, get the 5w. Less heat is better for battery health and a 5w will be the coolest.

I’m not familiar with GaN chargers I’m afraid. The only thing that matters for the phone itself is battery heat and slower charging/lower wattage won’t get hot. The charge brick itself can be an unknown since I’ve had 20w chargers that were very hot or not hot at all, but the heat from the brick won’t affect the phone at least.
The best thing to do is pick something from a well reviewed brand. Anker and Apple are the main go-to but Belkin can be alright too.

Spigen phone cases have been pretty good quality in my experience, so I can only assume their chargers would be too.
If you want to be super safe, go with the slowest charger you can.

The Anker Nano is awesome. I don’t understand why Apple doesn’t also make a 20W charger the same size.

I use the anker nano! No issues at all, my Apple charging brick seemed to heat up too much while charging and kicked the bucket
