I don't know the answer to this but why do you assume something has been sacrificed?

Isn't the PS5 built to run games at 120fps?

Perhaps nothing has but doubling the frame rate on an already graphically very impressive game without any sacrifice feels too good to be true.

I'd love to be wrong, I've no idea

Because if nothing was sacrificed it wouldnt be an option, the game would just run at 120fps, why would they make artificially stifling the game an option for no payoff?

Because a lot of TVs can't run 120fps so they make it an option.

How a game will run it's entirely up to the developer if they do not aim for 120 fps they can technically push for better graphics, if their game poorly optmized it will be forced to sacrifice in other departments to reach 120.
