Every kit I've seen warns you to store them in the fridge if you don't plan on using it right away. Oysters are especially prone to this as they're super aggressive and love to fruit.

I've done a kit like this, instructions called to mist it now and again, I didn't monitor temp/humidity and it came out pretty productive. Milage may vary and I'm sure some areas you might have to be more vigilant for mold etc.
