It’s how the top gets crispy. There lard about 90% of the way up, so the bottom is juicy and the top is crispy

I just now understand the picture. The edges of the casserole have a weird look because of the flash. Makes it look like a plastic film top. Now i see that it's an open top braise. Cool idea. I do the same with duck. Might have to give it a try for carnitas!

The stuff the looks like film is lard. It’s pork cooked pork fat, the lard covers about 80-90% of the meat

Yup. The bottom left corner made it look like the film went past the dish. That's my bad for not looking closer. Good stuff, dude!
