Because it's carpaccio
Prinzka t1_j5fesx7 wrote
Is it though?
Carpaccio should be completely raw, not seared.
This is thinly sliced black and blue steak

Searing the outside kills any chance bacteria. If Alton Brown suggests it to concerned cooks, and he still considers it carpaccio, then I'm not losing any sleep over OP's picture.
ChefLeStek t1_j5fjy3k wrote
In norway its actually not legal to serve meat without a sear, but fuck em, i still do it.
plooptyploots t1_j5fm8xe wrote
The sear is usually trimmed off.

Its too well done for carpaccio
tyzzem t1_j5fnmgc wrote

Lol ‘waygu’. Marbling looks terrible- this ain’t A5 and if it were, this would be a criminal way to eat it.

Theres almost no fat lol dude got scammed He got this wagyu from arbys wagyu burgers
Spider305 t1_j5gcb20 wrote
That ain’t waygu. No marbling whatsoever
XJDenton t1_j5goh3a wrote
Wagyu is a (number of) breeds, not a grade. A1/A2 wagyu with minimal marbling is still a thing. Not that the Japanese system applies to any meat bred outside of Japan anyway.
CanadianTrumpeteer t1_j5gospl wrote
As a beef carpaccio, looks delicious. Wagyu? I think they are overselling it.
EarlKentaDay t1_j5gtjhd wrote
You all are ragging on the wagyu, but wagyu is just a breed of cow. The marbling depends as much on the cow’s diet and the way is raised. This could be a pasture-raised wagyu with a majority grass diet.
Also carpaccio is typically made with a leaner cut of beef. I’m not saying for sure this is wagyu, but I am saying that you can’t really tell.
KuchenDeluxe t1_j5hhh5o wrote
and here u can see the marbling isnt anything special. no special died just a normal cow it was hehe but as long as it has a hippster wagyu tag shrug
EffectiveAfternoon60 t1_j5hrrh4 wrote
I’m sorry but that meat isn’t cooked whatsoever. Cook it and it would be amazing

Hello?? Carpaccio???
worstpolack t1_j5irqgw wrote
Wrong. You can have carpaccio or any other raw beef food with A5 and it’s delicious and not a criminal way to eat it. Also wagyu is just a breed (和牛literally means japanese style cow) and the marbling decides the quality.
ISwearImNotAnAI t1_j5itk5m wrote
If you get wagyu, but its just the normal ungraded version. It might aswel not be wagyu?
AlphusUltimus t1_j5j0f7u wrote
They import some Japanese cows over, make babies, and suddenly its wagyu. It's so stupid.
stopthechildren t1_j5j82y9 wrote
Do you go to sushi restaurants and then complain about the fish being raw?
[deleted] t1_j5jbv6z wrote
I’m fully aware waygu can and probably should be eaten raw or damn near raw. Carpaccio done exactly the way OP posted is a tired 80’s cliche dish that sucks and can be found at dated restaurants worldwide, likely packed full of octogenarians in diapers. It is absolutely criminal to eat waygu of any grade with that amount of cheese and aioli. Has nothing to do with being raw. The marbling here also sucks so it is low grade waygu at best, if not a bait and switch, and definitely nothing to be posting internet flex pics about
EffectiveAfternoon60 t1_j5jhppa wrote
No I’d not eat sushi tbh

Your wording makes it look like you think only super marbled stuff is wagyu meat.
