Wagyu is a (number of) breeds, not a grade. A1/A2 wagyu with minimal marbling is still a thing. Not that the Japanese system applies to any meat bred outside of Japan anyway.

Wrong. You can have carpaccio or any other raw beef food with A5 and it’s delicious and not a criminal way to eat it. Also wagyu is just a breed (和牛literally means japanese style cow) and the marbling decides the quality.

I’m fully aware waygu can and probably should be eaten raw or damn near raw. Carpaccio done exactly the way OP posted is a tired 80’s cliche dish that sucks and can be found at dated restaurants worldwide, likely packed full of octogenarians in diapers. It is absolutely criminal to eat waygu of any grade with that amount of cheese and aioli. Has nothing to do with being raw. The marbling here also sucks so it is low grade waygu at best, if not a bait and switch, and definitely nothing to be posting internet flex pics about

Searing the outside kills any chance bacteria. If Alton Brown suggests it to concerned cooks, and he still considers it carpaccio, then I'm not losing any sleep over OP's picture.

You all are ragging on the wagyu, but wagyu is just a breed of cow. The marbling depends as much on the cow’s diet and the way is raised. This could be a pasture-raised wagyu with a majority grass diet.
Also carpaccio is typically made with a leaner cut of beef. I’m not saying for sure this is wagyu, but I am saying that you can’t really tell.
