Use more oil, let them half drown in hot oil and turn them more often, slightly less heat.
Those fries are too undercoocked.

for frying the schnitzel you can pour more oil and let it get warm and then put your shnitzel and what I do is I try to move it around in a circular motion to form some ridges and check if itβs golden brown Iβll fry the other side and I try to do all of that in medium heat.
your fries can be cooked a bit more and I suggest after you take them out of the oil season them with anything that you like. (my favorite seasoning mixture is grounded black pepper+salt+garlic powder+parmigiano cheese)

The schnitzel is overcooked. Less temperature for your pan and turn it more often.
The fries are undercooked. Slightly more temperature for the oil. Try double frying.

Use oil AND butter! And there are some numbers on the stove between 0 and 9β¦ So it is not a steak, just show it some love on medium-high temperature.

Fries look okay but pretty poor to be honest. Iβm going to give you some weird temperatures because you are making schnitzel so Iβm assuming you use Celsius, Iβll convert for you. First off as soon a you cut your potatoes throw them in water and gently agitate them for a minutes at least, next step dry them and then fry them at 162.7 degrees for 2 minutes. Allow to cool for a couple minutes and then throw them into a freezer. After at least an hour fry at 162.7 until golden brown.

Are you shallow frying the schnitzel in a frying pan? Lower the heat to get a more even colour instead of burning the schnitzel where it touches the pan, and don't be shy with the amount of oil you use :)

First of all, get a nice cut of beef or pork instead of chicken. Then smash the shit out of that thing. Like, wrap it in plastic and get the hammer. The Austrians say you gotta be able to read through it but that ain't true, slightly thicker is probably optimal. The crust is the only thing you seem to have managed so I won't tell you how to do that. However, fry with a lot of oil and slosh the oil around the pan so it will also cover the top of your schnitzel. That way you'll get those nice bubbles in your crust. I'm not sure if it actually does something for the taste, but this is the way it's supposed to be done and how you can identify if you've got a properly cooked schnitzel at a restaurant or just a deep fried one.
I don't know what you did to those fries, but damn, they look like they could need some oil. I've heard that duck or geese fat is best for making french fries, but honestly, if you're doing them at home some regular cooking oil is just fine. If you're making them in the oven or air fryer, dump em in a bowl beforehand, add oil and seasoning and shake until all the fries are well covered.
