What makes Provolone sharp?

Kinda like sharp cheddar. In this case the provolone has an almost "funky" strong taste like any aged cheese usually does. It's delicious and if you have a primo subs near you they're definitely worth checking out. Really good subs and quality meats and cheese.

Sounds like an American thing

Sharp cheddar is well known, existed before the USA did. Sharp provolone? I dunno

Sharpness in cheeses is sort of like bitterness in that it has a very strong initial taste.

bitterness is so not how I'd describe sharpness. It's more like a zing, or bite-y taste.
