Did you make the mortadella? My MIL says mortadella is the same as baloney, other than that she not too bad. Looks great. Mortadella is underrated . Spicy is also good but I prefer regular and add something spicy if I'm feeling that way. Thanks for sharing.

The meat does look like mortadella bologna, bread also looks great, too much salad for my taste though lol

That's more a sandwich type, no? And made with ciabatta or similar. Maybe it's a thin ciabatta.

Originally a muffuletta (in Sicily, Italy) is a particular type of bread: round, quite flat and very soft inside and crunchy outside. But yes I've also seen it also referred to what's inside instead of the type of bread.
