As you can see I like my Prime Rib rare. I find dry aging a choice is cheaper than buying a prime and comes out just as good. Have done taste tests and texture tests before. Long as you have the space to store the meat, it can save you over a $100

Actually did a 500 degree sear for 20 minutes and then 350 for an hour. I let it get to 90 degrees internal for my own cut. Then cover it back up for the others that ate. Some people who prefer well done I let it cook in the am jus I make.
