yeah the bread is there to be eaten with any appetizers like caprese, salads, beef tartare, carpaccio or whatever. not with the pasta.

Not really. It‘ a small piece of bread with an appetizer and not a whole slice to serve your pasta on and make a dry looking Carbonara even dryer

Besides potential appetizers the bread is there to soak up leftover sauce after you finish any saucy dish i.e. pasta. That’s called “fare la scarpetta” and is common practice in Italy.
But yeah to put it ON bread seems more like a gimmick. Leaving aside the fact that this doesn’t look to be ACTUAL carbonara.
