yeah the bread is there to be eaten with any appetizers like caprese, salads, beef tartare, carpaccio or whatever. not with the pasta.

Besides potential appetizers the bread is there to soak up leftover sauce after you finish any saucy dish i.e. pasta. That’s called “fare la scarpetta” and is common practice in Italy.
But yeah to put it ON bread seems more like a gimmick. Leaving aside the fact that this doesn’t look to be ACTUAL carbonara.

Indeed. They give you complimentary bread to eat the remaining sauce with it and clean your plate. It is not to eat with the pasta because it doesn't make any sense. The OP's recipe doesn't make any sense.
