Super simple!
Gently poach chicken thighs with:
Cinnamon bark, Sichuan peppercorns, Cloves, Star anise, Ginger, Spring onions, Garlic,
Once poached place in ice cold water, chop and place in to a bowl (skin side down) until the bowl is full. Gently press down whilst you make the sauce.
Fry spring onions and ginger in 5 tablespoons of oil until they start to burn. Discard the onions and ginger and reserve the delicious, flavoured oil.
To the oil, add soy sauce (to taste), chopped ginger, garlic and red chilli.
Overturn your bowl of poached chicken on to a plate and top with the spring onion oil mixture.

It's very different from what I usually make, and it sounds very delicious!
