24 hour brine beforehand.

Spatchcocked and butter/garlic/herb mixture under the skin.

Smoked at 265 with applewood chips until the breast hit 160 and then let it rest for about half an hour.

Im sure that spatchcocked turkey tastes great, it just looks so much like a head crab from Half Life that I’m not sure I could ever make it
