I was actually trying baking Belgian Waffles for the first time yesterday. It went pretty bad. Didn't come out crusty at all, not fluffy either. Did you achieve those consistencies? If so, could you share the recipe?

They are actually Luikse Wafels or Gaufre de Liège. Brussels Wafels are square, lightier dough.

I prefer the Luikse version. Enjoy!

You might want to translate these from Dutch in to English though I think most Belgians without the well known cooking book "Ons kookboek van den boerinnenbond/kvlv") would end up with these recipes:

I made & sold liege waffles professionally for years

The iron should be very hot - just below smoking

This helps to caramelise/melt the pearl sugar

The dough will be very similar to a brioche dough

Defuq is a 'Belgian waffle'? We have Liège Waffles (big Sugar lumps, heavy dough) and Brussels Waffles (mega crispy, airy inside, yeasty taste). This does't look like any of the two.

Fun fact, Belgian Waffles are an American invention. What you have made are called Liege Waffles. Dense, walk around street food waffle generally eaten with just powdered sugar if anything at all. Brussels Waffles are a lighter, fluffier, dessert type waffle, that you generally eat with a syrup or fruit topping.

And also one of the greatest injustices if you order one in America. The US wouldn't know a a real 'belgian' waffle if it smacked them in the face. The nearest comparison might be Dutch pannekoek, but still nothing close to a firm Liege waffle.

Spent a couple of years, on and off, living at the Royal Windsor (now the Warwick). One of my favorite treats after dinner was to walk to the Grand Place and get a liege at the Australian ice cream shop. No toppings, pure heaven
