My wife makes homemade sourdough, and we basically made homemade McGriddles with her leftovers by making sourdough pancakes with syrup dropped in them while cooking. Of course that’s not Keto 😂. I will try the recipe with paprika though! Haven’t thought about that.

Good point about the keto. I like to soak up any left over grease with the bread and sorta toast it, sprinkle paprika on it, load the jowl and peppers/onions, and good to go. Jowl is definitely the best for this, idk why.

If cooked right, i prefer it over any bacon. And it’s so much cheaper.

I put it in most things for seasoning. It’s a game changer. I smoked some myself 3 weeks ago. I couldn’t find any for 5 months. Finally found some partially cooked at Walmart and finished it up myself.

Absolutely! I don’t know if it’s common where you live, but I recommend looking around your area for an actual butcher shop. I am good friends with mine, so it’s easy for me to get everything from jowl to tomahawks to wings for a great deal, and with much higher quality! Often times people have one nearby and don’t realize it!

Believe it or not, I live in the Deep South. Wouldn’t expect that. Granted, I didn’t do a deep dive search. I haven’t looked for a butcher shop as they tend to be on the pricey side. But thanks for the advice. I’ll check it out

I live in Alabama, they are often called “meat markets”. And I thought they were more expensive too, but at least the one I use normally is very fair. And even the ground beef they say is 80/20 is more lean than the 80/20 from grocery stores. So it goes a lot further. Good luck to ya

not sure if you'll like it but, try to slice them small, then add a small amount of vinegar, sugar, a teaspoon of mayo, then sliced ginger and pepper. MIX

perfect with beer
