Agreed looks a little too thin right now, cook down a little more, then put in the fridge. Red beans and gumbo are always better the next day!

Definitely planning to. I made a triple batch rather than a double because my family is huge and my boys are getting big. I forgot that I need to add time to the recipe when I multiply it so much.

Not the right answer...but an acceptable substitute! Camellia is the preferred Cajun/Creole brand, and I would recommend trying next time if you can. I don't know what makes them "better", but I will swear they are.
