You need to cook that down for another hour or two.

Agreed looks a little too thin right now, cook down a little more, then put in the fridge. Red beans and gumbo are always better the next day!

Definitely planning to. I made a triple batch rather than a double because my family is huge and my boys are getting big. I forgot that I need to add time to the recipe when I multiply it so much.

Definitely. I do the same. I hope it turns out great👍

Also mash some of the beans to thicken it up

As a Southern Louisianians, what brand beans did you use? There is only 1 real answer!
Maker-of-the-Things OP t1_itte6no wrote
Goya (dried)

Not the right answer...but an acceptable substitute! Camellia is the preferred Cajun/Creole brand, and I would recommend trying next time if you can. I don't know what makes them "better", but I will swear they are.
Maker-of-the-Things OP t1_ittejla wrote
Sadly, we don't have that brand up here in the midwest

You can get them on Amazon...but wow, they are very over priced! I see nothing wrong with your beans and would gladly join you for a bowl!!
