Pork is the meat I'm most unsure about cooking. I don't even bother commenting on the cook because I have no real idea.

Looks good. Try an Iberico pork loin next time. You'll never want to eat any other type of pork again!

May be a tad undercooked ? Or am I too harsh ? Can someone please tell me ?

Cooked to an internal of 140, medium-rare I believe is fine? It tasted solid but if I’m wrong please do let me know!

I've been taught that pinky porky is undercooked. My mom usually cooks it in a cast iron plate to keep in the juice :)

Pink is fine as long as it reaches an internal temp of 145F for at least a minute
wallabyfloo t1_itpafzp wrote
Didn't know that, thanks !

There are lots of “rules of thumb” for cooking (no pink in chicken or pork, for example) that will often cause your meat to be a little over done. Time at temp is king for actual safety. If you really want to have great roasts every time, invest in temperature probes

Came for the “omg this is undercooked!!” comments and was not disappointed. OP, the cook on this looks fantastic and I hope you enjoyed it.
