You are close to...The Secret. So very, very close.
You must add smaller portions of banana...to the curry itself, when a quarter of the total cooking time has elapsed.
If you have also added fresh-cut garlic beforehand, the result may blow your mind...

I have chopped banana inside, also a bit of bananas I caramelized, added garlic just before it was done, the banana on top is just garnish

That’s what makes curry great, no matter where in the world you go, it’s always different. Even in a particular region, it will always change just from local ingredients, spices and preparation.
Much of the time people just wing it based on what they have, that’s what makes fun
