It looks like a nice dish, but reapers are a bit much for me. I think I’d do it with a less intense pepper

What purpose does the tallow serve here? Not enough fat rendering from the thighs?

Tallow adds the fat to the meal and I let the peppers sauté in it for 30 mins, add chicken until it’s cooked, Frank heat then sear the chicken.
