Couple cans chickpeas, one carrot diced, half a cucumber diced, half pint of chrrry tomato cut in half, half red or white onion diced, 3 green onions sliced, half bunch of parsley, crumbled feta, handful of kalamatas olives, handful of green Greek olives, juice & zest of a lemon, olive oil, red wine vinegar, salt & pepper to taste

Yeah, I ate it for lunch today and it is fine. The parsley wilted a little bit but other than that it was totally fine. I’d say it’s for a 48-60 hour life span before the cheese really starts to break down
