Your call and the mobile data go over the same bandwidth. When you are making a voice call, a lot of bandwidth is needed for the call alone, leaving little for the data connection, which can indeed lead to interruptions in the data you are getting.

A standard voice call uses 8kbps, an HD voice call uses between 13-24kbps (depends on carrier codec). Modern phones have available bandwidth in many mbps, so this is not what's causing the OPs issue.
