That was my thought process of something engaging to ease the nerves but with it being an online match may just want to make sure I can get through a conversation or two first before getting immersed in anything

Some other good 1st dates I went on (that were cheaper since the aquarium costs like $70 for 2 tickets) are ice skating, and walking around. The zoo might also be fun depending on the weather.
