Never had them fried hard. Regardless of how you like them they're the best wings around and I'll fight anyone who says otherwise

OLD-PERSON RANT INCOMING: I am 100% over the hard fried phase. To me it's become a way to justify shitty cooking technique. If it's fried correctly it should be plenty crunchy. Everyone seems to overfry their wings now under the guise of hard fried.

Maybe in the hands of a truly skilled chef it would be different. But for now, just fry them the right way.

I like fried hard from there. I don't really like the 'chef style' where the wings are softer and covered in a garlic sauce.

I think I just like my wings fried completely so it's crunchy on the outside

Old person agreeing with you. The first time I saw fried hard on a menu I had no idea what that meant, then I was served over-cooked barely edible wings. If you want extra extra crispy wings go with double fried Korean style chicken at one of the places that does that specialty. Wings fried hard is an anathema to anyone with taste.

I like their chef's style (I add garlic and parm to wing sauce when I'm making them at home) and am partial to fried hard because it holds up to the sauce better. Have never had an issue with dry/tough meat there that I can recall.
