“Century’s” means “belonging to century.”
“Centuries” is the plural form of “century.”
Apostrophes do not pluralize. The only exceptions are in the cases of initialisms comprising both uppercase and lowercase letters (as with “RoUS’s”), and standalone letters (as with “Mind your P’s and Q’s”).
Dates, numbers, and other non-standard nouns are pluralized by appending the letter S to them. “1990s” means “the decade which includes the years 1990 to 1999,” for instance, whereas “90’s” means “belonging to the specific year or number 90.”
