As a fellow sentimentalist (and dog owner):
Are you looking for day trip activities you can do without your dog, or more local things things that your dogs can come along (or wait in the car for a reasonable amount of time if the temperature permits)?
Go to Port Townsend! It’s super cute and a nice day trip.
Go up to Bellingham and drive down Chuckanut drive.
Go to Chehalis and walk the Willipa River trail, and stop in at Shakespeare Book Co.
Go to Point Defiance and wander the trails on 5mile drive.

My husband and I have an anniversary coming up and we also have two senior dogs with medication regimens. We are going to stay a couple of nights at the Clark Fork Lodge at the base of Scotchmans Peak and go snowshoeing and just hang out :)
You could pretend you're tourists and do all the local sights, maybe for the first time alone without out of towners?
Space needle, pioneer square, Pike place, whatever things are already your favorites to show other people. But focus on actually enjoying it first hand, if you never have.
You could go full cheesy mode and do the stuff tourists love, like flagship Starbucks and such, or enjoy being your own local tour guide and make use of your inside knowledge of hidden gems
It's a bit of a drive but Walla Walla has some great restaurants. Wish it was a few weeks ago, they had lots of dog friendly patio options too.

There are plenty of good kennels that can competently care for your dogs while you are away. Board them, and go on whatever vacation you want.
