Yes! There is a guy at the farmer’s market on Saturdays but that may be over now. It’s called Sky Sharpening.

Thank you all for these suggestions! I'll check them out and try to stay hopeful. The problem is that options I checked in the past didn't do the 12 to 15 degree angles that Japanese knives require. Most do the 20 to 22 degree angles that German knives have. But maybe more people have Japanese knives now and the local services are more available. Fingers crossed.

I don’t know if they do it but there is a Japanese grocery store downtown called Maruichi—worth a call to ask!

I just realized you also said they’re Shun. I have a bunch of Shun knives that came with free lifetime sharpening. You can reach out to them to make arrangements and you just have to pay the shipping. I’ve done that several times too. It’s a pretty quick turnaround.
