Perhaps the op is talking about apple flavouring? sour apple flavour seems to be more popular in the world of sweets, and most apples in pies are generally green.

Most apples in pies are definitely not green. They grow apples specifically for pies. Empire apples. Also red.
But yes, if we are talking about sugar candy facsimiles of fruits, sour apple is a thing. But so is blue raspberry so really what are we talking about. 🤣

Granny Smith apples are top tier pie apples, as are many other green apples. Tart apples generally cook better, and have a more balanced flavour when cooked.

Color coding. Cherry is already red, strawberry is pink even though strawberries are red, raspberries are blue for some weird reason, watermelon is a slightly different pink than strawberry, apple is green, lime is a yellow green, grape is purple even though green grapes exist.
